The good: I just discovered a whole bunch of really tasty-looking grilled cheese recipes
The bad: cheese is more expensive in Canada than it is in the States :(
The recipes:
Balsamic Brussels Sprouts Grilled Cheese from How Sweet It Is
Some people don't like brussels sprouts. All I can say is that they're probably cooking them wrong. Also, I need to pick up some balsamic vinegar.
Broccoli-Cheddar Soup Grilled Cheese from BS' in the Kitchen
I am a huge fan of one-pan cooking, because while I don't mind doing the washing up, it's still another chore to be gotten over as quickly as possible so that I can do fun things. (On the other hand, it's an excellent procrastination tool). Also, broccoli is tasty, and I'm always in favor of added protein to my grilled cheese.
Spinach & Artichoke Grilled Cheese from Annie's Eats
Yes, yes, artichoke and garlic! And Greek yogurt and/or sour cream. And, of course, the power of cheese. OM NOM NOM.
Grilled Cheese with Avocado & Heirloom Tomato from Fifteen Spatulas
Avocado is amazingly delicious. And apparently, it's a good stress-reducer food, and has the good kind of fat in it. Hey, I'll take whatever excuse I can get on this.
(Bonus recipe: Avocado Shake (Sinh tố Bơ) from Viet World Kitchen. They're not kidding when they say split it up between a few people, because it is rich as all get out.)
Lamb Grilled Cheese Sandwich from Pass the Sushi
OMG lamb. Lamb lamb lamb lamb. If for some strange reason you don't eat your leftover lamb directly out of the Tupperware you stored it in, then this seems like a nice thing to do to it.
French Onion Grilled Cheese from Portuguese Girl Cooks
I love soup as much as the next lady (assuming that the next lady also loves soup), but sandwiches are a bit more portable, and I worry less whilst eating them around books and technology. Also, I ought to pick up some wine for deglazing pans and drinking. I'll need to see if any stores around here sell those four-packs of one-cup bottles, those are just what I need.

I am also a big fan of bite-sized things. Also, bonus easy party-platter!
Super Frico Grilled Cheese from Steamy Kitchen
...Why have I never thought about putting more cheese ON TOP of my grilled cheese? Brown and crispy bonus cheese, om nom nom!
Some of these can probably be adapted to tasty sans-cheese sandwiches, but I'm sure I can squeeze delicious cheese into my budget somewhere. I'll keep an eye on the coupons for when it goes on sale.
